| When we were approached
by the team to get involved with the production of Soup Kitchen
we knew straight away that it was something we really wanted to
do. At Maldon we’ve always believed that good food is one
of life’s fundamentals; that’s why we’re so delighted
to be supporting, through our sponsorship of this book, those charities
that do such great work in providing this basic human need.
Throughout the book, you’ll find recipes for lots of different soups.
The styles and flavours may vary but they do have two things in
common: they’re all delicious and they’re all made from
real, natural ingredients. Many of the recipes mention Maldon Sea
Salt by name, and for a very good reason. Chefs the world over prize
the unique qualities of Maldon: its soft flaky texture and lack
of bitter chemical aftertaste make it the natural choice to complement,
rather than mask, the fine flavour of their food.
This is partly thanks to the naturally auspicious conditions at
Maldon in Essex, home to salt makers since Roman times. Additionally,
the traditional skills handed down through generations at the Maldon
works since 1882, including the age–old technique of hand harvesting
using long handled rakes – known as drawing the pans – still practised
today, create a product that’s simple and unadulterated. Just
the way we like our food!
